MY FAVORITE BUDGET GOURMET: CHICKEN PICCATA
Chicken Piccata is a delicious gourmet Typically I do not post recipes I am actually a Frugality and Finance blogger. However tonight I decided to create a post and share a budget friendly gourmet meal that we love. To be honest as much as I love to cook you may actually be seeing more recipes like this one in the future. This recipe is not only delicious and fairly easy to make, it is also pretty budget friendly also. I love to cook but between my full-time job and running the blog I rarely ever get creative anymore. Tonight is different though and I have decided to both get creative in the kitchen to stretch our budget and also create a recipe post for you. We tend to stick to the old standbys most days, but when I am feeling like making something special this is one of my favorite go to recipes.
Best Easy Chicken Piccata
Serves 2
Items needed
2 boneless skinless Chicken breast
1/8 ounce parsley
1 lemon
1/4 cup flour
2 TBSP butter
2 TBSP capers
1/2 cup white cooking wine
2 1/2 TBSP Olive oil
salt and pepper
Place flour on a large plate and season with ½ teaspoon salt and pepper. Season chicken all over with salt and pepper. Dredge chicken in flour. Set pan on medium-high heat with 1 tablespoon of butter and ½ tablespoon olive oil. When butter is foamy, add chicken and cook until crust is golden and chicken is cooked through, 3-4 minutes per side.
While the chicken is cooking, chop the parsley, lay the capers on a paper towel and pat dry, measure the lemon juice and white wine for the sauce. This makes it so much easier to just add all the ingredients to the pan for the next step, making the sauce.
Move chicken to a plate, leaving the pan as is with the chicken pieces and juice left behind to make sauce. Add the capers, white wine, parsley, and juice of 1 lemon (I use a lemon juice bottle and add 3 TBSP lemon juice instead) to pan over medium-high heat. Cook, until liquid is reduced by half, 2-3 minutes. Add remaining TBSP butter to the sauce. Return chicken to pan and turn to coat.
Serve immediately. Enjoy!
This is a great gourmet meal to make in place of eating out or for a special occasion. You will honestly be surprised at how delicious this meal really is. I have a feeling it may become a new favorite of yours also. I tend to pair the Chicken Piccata with a vegetable, usually Asparagus or Broccolini are our favorites. Broccolini tastes better than broccoli, trust me. I pair the chicken and the vegetables with either rice, potatoes or pearl cous cous. There are actually many different things that would pair well with this chicken Piccata. You could attempt it with salmon if you enjoy seafood or another great alternative would be Veal. I can guarantee any way you make it and with any type of meat this recipe will be amazing.
